Steps:
Cutting/ Cleaning Prawns (refer to diagram)
- Using scissors, cut along red lines
- Make a small cut on yellow lines
- Using tip of scissors, dig out a dark coloured string (abdominal segment of the prawn) from yellow lines’ cutting
- Rinse prawns with running water
Cooking:
- Add ginger, sugar, salt and pepper to the cleaned prawns. Marinate for about 3 minutes.
- Steam until the prawns turned to orange colour completely. Duration depends on size of the prawns (about 10 – 15 minutes)

Use scissors to do the tasks as it is easier to manage compare to knives. If you planned to freeze the prawns you just bought for cooking on other days, cleaned them following the above steps. Place them in a container with 2 tbsp of sugar evenly mixed then place into freezer immediately. Before cooking, make sure they’re completely thawed to avoid the prawns’ flesh attached to shell when cooked.
Many types of prawns are available at market and supermarket. If you are not sure which type to choose, select based on the size and according to your budget. Some can be expensive so beginners please choose cheaper ones for first trial. Fresh prawns are slightly translucent in colour (depends on variety) and their shell should be well attached and tight.
Quantity of ginger used in steamed prawns recipe depends on prawns freshness – the fresher the lesser unless you love ginger. Xiao Xing wine also acts as fishy smell remover while enhancing the taste and creating delicious sauce! Steamed prawns with sauce are best served with rice.
