I know this sounds simple. But let me share with you some tips on one of the easiest recipes of all time.

Egg omelette is often cooked using chicken egg. This plain egg omelette recipe, like its name, is only using chicken egg with salt and pepper as seasoning, therefore “plain”. Egg recipes are so wide that I have numerous egg omelette recipes at mind when omelette is mentioned, and this is the simplest.
Egg is the main ingredient in egg omelette recipe so it is important to have fresh eggs. In Steamed Egg Recipe I shared previously, there are tips on how to identify fresh chicken egg. In addition to those 2 tips, there is another method to identify fresh chicken egg that I would like to share here. Freshness of chicken egg can also be determined from the texture of the shell surface. Feel the surface of chicken egg shell by rubbing softly with fingers. They are normally smooth but if you compare several eggs, you will find some being smoother while some coarser. The coarser the fresher! J
When cooking egg omelette, the difficult step is flipping the omelette. It is not easy to get a perfectly round egg omelette so you can divide the omelette with spatula to smaller pieces (half or quarter) then turn over the smaller pieces to cook the other side. Another method is to keep stirring the eggs when frying the omelette – so that uncooked parts mixed with cooked parts evenly and eventually cooked at the same time. But you will get different levels of doneness in one egg omelette. Try this method only when you are used to cooking with pan or wok.
Once you master plain egg omelette, you may want to try cooking some other varieties of egg omelettes. The cooking method is basically the same but you can add other ingredients to the eggs before cooking. Sliced onions, sliced chillies, small prawns, kuchai or chives, diced long beans and etc. these are some examples of ingredients you can add to plain egg omelette recipe to create new egg omelette recipes. Just pick your favourite ingredients.
Egg Omelette Recipe
Serves: 2 pax (with rice)
Ingredients:
- 2 nos. of egg
- ½ tsp of salt
- 2 tbsp of cooking oil
Optional:
- A pinch of pepper
- A dash of light soya sauce (add after cooking)
Cooking Method:

- Break eggs into a bowl and beat.
- Add salt and pepper and stir well.
- Heat cooking oil in a pan.
- Pour eggs into the pan to fry.
- Flip to cook the other side of the egg omelette.
- Ready to serve.
