Fried Prawn Cake recipe shared here is a family homemade recipe we called “peter” (in Chinese). I don’t really know how the name came about though. It is basically prawns mixed with vegetables and flour, fried to a round shaped cake. Slightly different from the fried prawn cakes available at hawker stalls. Homemade recipes are always fuller with ingredients, healthier and with hygiene you can guarantee (since YOU are making it).
Fried Prawn Cakes are often serve as snacks (fried snacks) but sometimes also as main course, depending on the size and filling-ness which you can control. You get thinner and crispier prawn cakes if you fry using a pan. If you use a wok, you get thicker and softer prawn cakes. I personally prefer prawn cakes fried in wok since it has a combination of crispy and soft – crispy on the thin sides and softer on the thick middle.
Fried Prawn Cakes can be turned into “biscuit” when fried using big pan. Prawn cake mixture will spread when poured into pan so you get very thin and crispy prawn cake. If you don’t have a big pan, pour in lesser amount of prawn cake mixture when frying. You get smaller pieces of prawn cake but they are thin and crispy all the same. Beware not to let burn though.
When preparing prawn cake mixture, flour and water ratio is important. The mixture should be thick and slightly sticky instead of watery. So add water bowl by bowl when preparing the mixture. If too watery, add some more flour. Similarly, if too thick, add some water. Since you can fry the prawn cake piece by piece, if the first piece failed you can still adjust the mixture before frying the second piece. The mixture can last 2 more days if properly covered and refrigerated.
Fried snacks are heaty. Fried Prawn Cakes will do good with some cooling drinks…hm…yearning for it now. Try it out and happy cooking!
Ingredients

1 bowl of small/ medium prawns (cleaned, shell removed)

2 nos. of red chilli (seeds removed, thinly sliced)

5 strands of French beans (thinly diced)

2 bowls of wheat flour

5 bowls of water
-
1 tsp of salt
-
½ tsp of pepper
-
Cooking oil (for frying)
Optional
-
2 tbsp of corn flour
-
½ no. of onion (thinly sliced)
Cooking Method

Add all ingredients (except cooking oil) to a big bowl. Stir to mix well to get prawn cake mixture.

Heat cooking oil in a pan or wok, enough to cover a thick slice of prawn cake.

Add 1 scoop of prawn cake mixture to the heated oil to fry.

When the bottom of the prawn cake turns brown, flip the prawn cake to brown the other side.

Ready to serve.
